- One tablespoon of Smoked Paprika

To begin the process first, you need to add pepper, salt, paprika, garlic, lemon juice, and a small amount of olive oil to the steak, then gently rub them together.
Then put the mixed bonito steaks in a baking pan and cover them with plastic or aluminum wrap to refrigerate them overnight.

I was skunked (1 time) fishing for Mahi and or grouper etc… We caught many Bonita and threw them back. Until we said, hell that’s what we’re catching so that’s what we’re eating. The absolute best way to cook and eat Bonita is to gut, cut into steaks between backbone. Then cut chunks by cutting around the spine bones and dusting them in your favorite spices and thrown them in a hot iron skillet for less than a minute and enjoy with favorite dipping sauce or like me, right out of the skillet. I tried many way and this is delish. Period.
